I've found the best way to tenderize ribs is to steam them.  Not only is steam hotter than boiling, causing the meat to fall off the bones, it causes the meat to expand, making the ribs fuller.

Yep, Chef has it right about steaming in it's own juices Dan. WAY more flavor.

And the suggestion of a brine is a good one for the less prime cuts of meat especially. As to the nature of that brine, I use herbs appropriate for the kind of meat.

And Chef's suggestion about using things other than the basic brine is a good one. One of my favorite things to use...and it is the right time of year right now...is Samuel Adams Oktoberfest beer. It has a flavor that REALLY matches well with wild game, like venison.

Brine a deer shoulder with a few pepper corns, a couple bay leaves and an Oktoberfest added to the brine and left over night, wrap it in foil as Chef suggest and then throw it on the grill or smoker to cook low and slow and man....it's smack ya momma good. LOL

The thing is, there are so many flavored and niche beers out there now that are flavored with all kinds of herbs and spices that it just makes sense to make use of them. And the cool thing is...all the taste testing required to see what goes with what is legitimate. ;~)

Heck, one of my favorite alcohol additives is a GOOD extra dry vermouth. Stuff is just packed FULL of subtle flavors once you burn off the alcohol. Goes great with things like shrimp and chicken by the way. ;~)

Basically goes with anything white wine will.  Just remember to use about half as much as you would wine.

Yep, liquor and lemon. One wakes me up and the the other wakes up herbs and spices. LOL

It needs to be marinated if it is being served by itself. Unless of course you are grilling just to eat something quick. No sense in not marinating a good steak.
