Spice Cake with Caramel Icing

Spice Cake with Caramel Icing

     3/4 cup shortening
     2 1/4 cup flour
     1 cup sugar or less
     1 t. baking powder
     1/2 t. salt or less
     1/4 t. soda
     1/2 t. cinnamon
     1/2 t. cloves
     3/4 cup brown sugar
     1 cup buttermilk or 1 T. vinegar in a cup of milk
     3 eggs

   Stir shortening to soften.  Stir in dry ingredients, except brown sugar.  Add brown sugar, buttermilk, and mix until all flour is dampened.  Beat 2 minutes.  Add eggs, beat 2 minutes.  Bake in 2 round pans or, 1  13 x 9 x 2 inch greased pan.  Bake 350 degrees for 30 to 35 minutes.

                        Caramel Icing

     Melt 1/2 cup oleo or butter in a saucepan.  Add 1 cup brown sugar.  Stir constantly, and bring to a boil for one minute.  Remove from heat.  Add 1/4 cup milk.  Beat until smooth.  Beat in 3 1/4 cups confectionery sugar until smooth.  If icing becomes to hard to spread you can add a tablespoon or two of water as needed.  Beat in and spread on the cake.

Just made spice cake last week.  Wish had checked far enough down the line to see this BEFORE but now have good recipe.  The icing sounds ok
but we just like plain spice cake.
